Barichara Gastronomic Tour, eat like a local
To truly experience a different culture, you must try a variety of new foods unique to the region you’re visiting. While in Barichara this is the one gastronomical experience you must take to have an all-encompassing understanding of the Santander culture.
Your local guide will accompany you to a number of typical restaurants, where you’ll enjoy the sampling of dishes that are genuinely distinctive to this region of Santander, Colombia. You’ll be collected from your hotel to start this wonderful walking tour visiting several representative restaurants where you will try a variety of different products of the local autochthonous gastronomy.
Your first stop will be to enjoy an Arepa starter. Although Arepas (a type of flatbread made from corn flour) are found throughout Colombia and Venezuela, these ones are distinctive and known as Arepa Santandereana (Arepa from Santander). The best way to describe this dish is it is a peeled corn arepa that is cooked with charcoal so that the corn grains are released on the skin. It also has a lot of flavors, as included within the Arepa mixture is some Chicharrón (cooked pork belly). Unfortunately, this dish is not suitable for vegetarians or vegans. So, you will just have to trust us when we say this is one of the best-flavored foods you’ll never get to enjoy.
Following your starter, you’ll be looking forward to the next restaurant that specializes in tasty Chorizo sausages. And just as the arepas before, these chorizos have a special Santandereana recipe. Whereby they are actually cooked with panela (a product made from sugar cane), or a traditional alcoholic sugar cane juice, known as Guarapo. Once again, these are very flavorful and absolutely lovely to try.
Next on your food tour is a restaurant where the "Carne Oriada" (Sun-dried red meat) is prepared, which is very typical of the region, this was the solution to the need to transport the meat when there were no refrigerators. This dish has an almost jerky-like consistency and full of flavor. At this stop, you’ll also get the chance to try some delicious goat, which is marinated, and oven cooked.
To complete today’s menu you’ll enjoy some delicious desserts, such as Bocadillo (a sweet made from Guava) with goat cheese, and some mouth-watering traditional Arequipe Gloria (Caramel) cooked in a customary wooden oven.
As an added bonus, no food tour in Santander would be complete without sampling the world-famous Hormigas Culonas (Big Ass Ants) - an unusual but delicious snack! If ever there was a typical food that was truly representative of the Santander region, it is these tasty little fellas.
